This is the most favorite recipe of my family I learnt this from my sas, she always make this so yummy that I can’t stop eating this.I always make it like this, Try it and you will not go for another recipe of karelay ghost/ Meat curry with bitter gourd.
1. Take 300 gm bitter gourd, peel them. 2. take out the seeds. 3. cut in desired shape. 4. mix salt, turmeric, tamarind, brown sugar. 5. rub on bitter gourd well. leave it for 20-30 minutes. 6. wash it properly rubbing and squeezing all juices with your hands.
13. add skinless tomatoes, salt, red chili powder, turmeric powder, coriander powder. with 1/4 cup water and stir on high heat until all juices evaporates.
15. While the meat is cooking, in a bowl slice 2 onions and green chilies, add in lemon juice 4 tbsp mix well set a side.. this step will reduce the bitterness of onions.
16. when meat is tender, turn the heat on high and stir it until all juices evaporates in it, then add sliced onion and green chili we marinated in lemon above, also add fried bitter gourd.
stir on high heat for 2-3 minutes, then add garam masala powder, crushed black pepper powder, julian cut ginger, fresh chopped coriander. again on low heat with lid cook it for 10 more minutes .. serve with naan, white rice, plain chapati.
