Karelay Ghost/ Meat curry with bitter gourd

This is the most favorite recipe of my family I learnt this from my sas, she always make this so yummy that I can’t stop eating this.I always make it like this, Try it and you will not go for another recipe of karelay ghost/ Meat curry with bitter gourd.

Serving= 4-5 persons

Ingredients,

  • meat of baby lamb or goat with bones  400 gm
  • bitter gourd 300 gm (before cutting)
  • onion medium  3
  • tomato skin less  2 medium
  • ginger paste  1/2 tbsp
  • garlic paste  1/2 tbsp
  • salt 1 tsp or as required
  • red chili powder  1 tsp
  • coriander powder  1 tsp
  • turmeric powder  1 tsp
  • black pepper crushed 1/2 tsp
  • garam masala powder  1/2 tsp
  • lemon juice 4 tbsp
  • ginger julian 1 tbsp for garnish
  • fresh coriander chopped for garnish
  • oil 1/4 cup

Directions,

1. Take 500 gm bitter gourd, peel them. 2. take out the seeds. 3. cut in desired shape. 4. mix salt, turmeric, tamarind, brown sugar. 5. rub on bitter gourd well. leave it for 20-30 minutes. 6. wash it properly rubbing with your hands.

10. now take the same 1/4 cup oil in a pan in which you fry your bitter gourd... add 1 sliced onion, cook it until onion changes its colour.

13. add skinless tomatoes, salt, red chili powder, turmeric powder, coriander powder. with 1/4 cup water and stir on high heat until all juices evaporates.

14. Now add 2-3 cups water and let it boil, then with lid on ,on low heat cook it for 1 hour 15 minutes, or until meat is 90% done.

15. While the meat is cooking, in a bowl slice 2 onions and green chilies, add in lemon juice 4 tbsp mix well set a side.. this step will reduce the bitterness of onions.

stir on high heat for 2-3 minutes, then add garam masala powder, crushed black pepper powder, julian cut ginger, fresh chopped coriander. again on low heat with lid cook it for 10 more minutes .. serve with naan, white rice, plain chapati.
