Gajar ka halwa/Carrot sweet

Ingredients,

  • carrots   2 kg
  • eggs  4
  • sugar 600 gm
  • khoya    900 gm   (Home made khoya) (you can also buy it from Pakistani or Indian sweets bakery)
  • almonds   100 gm
  • ghee/unsalted butter    5 tbsp
  • cardamom   10

Directions,

1. soak almonds in hot water for 15 minutes.remove the skin.

4. in a pan add them turn on the heat to medium high stir it for 10 minutes.

5. now on very slow heat with lid on cook it for about 2 to 3 hours.stir it after every 10 -15 minutes.

6.after 2 hours press the carrots if any juices inside,  cook it until all juices dry.

7. when all juices dry ,on medium high heat add 4 tbsp ghee/unsalted butter and 500 gm sugar.stir it until all sugar syrup dry.

8. now take out the carrots in another pan.add 1 tbsp ghee/unsalted butter in pan, turn on the heat.

9. add khoya cook it on slow heat for 8-10 minutes.

10. now beat 4 eggs with fork.turn of the heat and slowly add eggs one by one in khoya .be careful while mixing eggs,eggs should not scramble .
