Besan Soji ki Tukri

Besan Soji ki Tukri or Besan Soji ka jama hoa halwa or Besan soji ki katli or Gramflour semolina sweet  🙂 . So many names, call it whatever you like. Very easy and tasty Pakistani sweet. I usually make it and keep it in airtight box and it last for almost more than 10 days on room temperature. You want to keep it for longer then keep it in fridge and it will be perfect for almost more than 30 days.

It’s texture is not so hard also not soft. Made with basic ingredients which every Pakistani kitchen has gram flour, semolina, sugar, etc this sweet is heavenly good.

Tip 1 : Make sure to use fine semolina in this recipe. If you don’t have fine one then grind a little course semolina and make it fine. Also use caster sugar which is very fine sugar. If you don’t have that then grind it and make it fine  🙂  because it is a quick kind of recipe and if you use thick sugar then it will take time in melting and your mixture can burn.

Tip 2: If you want perfectly shape tukri use butter paper and do not touch it until it’s completely cool. If in hurry you want to take it out then it will break.

Ingredients

  • Gram flour (besan)  1 cup
  • Fine semolina (soji)   1/4 cup
  • Clarified Butter (ghee)   3/4 cup
  • Caster sugar  1 cup
  • Milk powder  1/2 cup
  • Small cardamom  3
  • Almonds & pistachio  8/8
  • Edible silver paper for garnishing  1

Directions,

1. In a wok add clarified butter, gramflour, semolina, small cardamom. Turn on the medium heat.

2. Cook and stir it until clarified butter melts. Then turn the heat slow and cook it until colour changes slightly and you can smell cooked gramflour.

3. Now add in sugar and milk powder.

4. Mix it by pressing in all ingredients with a spoon or spatula.Cook it on same low heat for further 10 minutes almost.

5. Line a tray with baking paper or grease it with butter. Put the mixture in and press it evenly.
This mixture will be sticky so better to use baking paper under it.

6. Sprinkle sliced almonds and pistachios on it and press them with the spatula.

7. Now garnish it with edible silver paper and let it cool for 2-3 minutes.

8. Cut it when it is still hot in desired sizes and shape.
Now let it completely cool on room temperature for 1 hour or in fridge for half hour.
